Spring is around the corner and I can hardly wait to sun bathe and get my Popsicle on!  Nothing beats getting relief from the hot sun better than an ice cold popsicle.  If I am at a public park or a trendy neighborhood in Atlanta I usually run into King of Pops, which are incredible organic pops made locally. They are soo yummy! But some days I do not feel like paying three dollars for frozen juice, especially if I have to feed a crowd some frozen goodness. So when I am on a budget I make my own. Here are four recipes I found on the Zoku blog that I will definitely try out at my next spring party. Which one is your favorite?

INGREDIENTS
FOR THE YOGURT BASE
6 ounces Vanilla Greek Yogurt
⅓ cup (2 ½ oz) 2% milk
fresh raspberries (2-3 per Quick Pop)
4 ½ teaspoons granola

MAKE THE BASE
In a medium bowl, whisk together Greek yogurt and milk until well combined. Mixture will thin out and become a pourable consistency.

ASSEMBLE THE POPS
Slice each raspberry in half lengthwise. Insert sticks and pour about 1 ounce of the yogurt mixture into each of the molds, allow the mixture to freeze. Add granola on each side of the sticks (about 1 ½ teaspoons per pop), pushing down with a chopstick if necessary. Pour yogurt base to the fill line. Let freeze completely, breakfast to go !

Cucumber Mint Margarita Pops!
INGREDIENTS
1 cucumber, peeled & sliced
2 limes, freshly squeezed
10 mint leaves
1 cup water
½ cup sugar
3 mint leaves (optional)
1 tsp tequila per popsicle (optional)

MAKE A SIMPLE SYRUP
In a medium saucepan combine the sugar and water. Over low heat allow the sugar to melt, stirring until sugar has dissolved. Allow to cool.

MAKE THE CUCUMBER MIXTURE
Blend cucumber, lime juice, mint leaves, and simple syrup and puree until smooth.

ASSEMBLE THE QUICK POPS
*Pour 3 teaspoons of tequila into the bowl and then pour the cucumber mixture in to measure. Mix well.
Add wet mint leaves to the pop molds and a cucumber slice on the opposite side. Insert sticks and pour the cucumber mixture until you reach the fill line. Let freeze completely.

Apple, Pear, and Orange Pops

INGREDIENTS
½ cup (4 oz) fresh apple juice; chilled
½ cup (4 oz) fresh pear juice; chilled
½ cup (4 oz) fresh orange juice; chilled

MAKE THE APPLE, PEAR, & ORANGE JUICE BASE
In a liquid measuring cup with a spout, stir together the apple, pear, and orange juices.

ASSEMBLE THE POPS
Insert sticks and pour the chilled Apple, Pear, and Orange juice base into each cavity until you reach the fill line. Let freeze completely. Repeat with remaining juice.

Consider all the combinations of fresh juice you can make; orange and pineapple, apple and black currant, carrot, strawberry and blueberry – the possibilities, and fun, are endless!

INGREDIENTS
1 cup (4 oz) fresh raspberries
½ cup (3 oz) blueberries
½ cup (2 oz) blackberries
2 oz light rum**
½ cup simple syrup*
8-10 fresh mint leaves

MAKE THE BERRY MOJITO BASE
Combine all ingredients in a blender. Pulse the machine until the mixture begins to smooth, but still has a little texture to it.

ASSEMBLE THE POPS
Insert sticks and pour the Berry Mojito base into each cavity until you reach the fill line. Let freeze completely.
